Are you an experienced Sous Chef? This job is in Wollongong, New South Wales. You will help run a professional kitchen and lead the team during service.

You will help plan menus, cook and plate food, train staff and watch stock and waste. Your qualifications and experience will be checked, so keep your papers ready.

Key Responsibilities

  • Lead and organise the kitchen team during every service
  • Help senior chefs with menu planning and kitchen preparation
  • Cook dishes to the quality and presentation standards of the kitchen
  • Organise plating so food is ready for service on time
  • Supervise and guide kitchen staff when it is busy
  • Teach team members kitchen procedures, food preparation and safe work habits
  • Keep to strict food safety, hygiene and HACCP standards
  • Check stock levels and plan food preparation to match what the kitchen needs
  • Help with inventory, food costing and reducing waste
  • Check food quality, consistency and presentation before it goes out
  • Take charge of the kitchen when senior chefs are not there
  • Help create and introduce new and seasonal menu items
  • Look after kitchen equipment and report anything that needs repair
  • Keep work areas clean, tidy and safe for health standards
  • Talk with front-of-house staff so service runs well, and find ways to make the kitchen more efficient and the food better

Requirements & Eligibility

  • At least 2 years' experience as a Sous Chef, Senior Chef or equivalent
  • Professional cooking experience that others can check independently
  • Relevant culinary qualification, apprenticeship or minimum Certificate III in Commercial Cookery or equivalent
  • Strong practical knowledge of commercial cooking and food preparation techniques
  • Knowledge of food safety, hygiene and HACCP requirements
  • Valid NSW Food Safety Certificate
  • Current food handling certification
  • Proven experience leading or supervising kitchen staff
  • Can keep food quality the same under pressure
  • Strong planning, organisation and time management skills
  • Experience with stock control, food costs and cutting down kitchen waste
  • Strong communication and teamwork skills, and a professional attitude with a genuine commitment to culinary standards
  • Able to work full-time in New South Wales
