A premium hotel in Queenstown, New Zealand, is looking for a Sous Chef. The hotel is being transformed right now. The chef will help lead the kitchen team across several dining and bar venues.

This is a permanent, full-time job with a minimum of 40 hours per week. The employer can sponsor the right person on an Accredited Employer Work Visa (AEWV). This is a visa that lets a New Zealand employer hire a worker from another country. New Zealand residents and international candidates are both welcome.

Key Responsibilities

  • Manage food production in all hotel kitchens. Check every dish before it goes out.
  • Check and correct preparation, rotation and mise en place. Make sure every section and every cook is ready before the first cover.
  • Look at the rosters so each section has enough staff. Give tasks to junior chefs, and help on a section when needed by preparing, cooking and serving food.
  • Control food cost with careful stock rotation, correct ordering and par level management. Reduce waste and spoilage in all storage areas.
  • Hire, train and develop kitchen team members.
  • Build a team that works well together and stays productive.
  • Keep the kitchen clean, safe and hygienic. Follow WHS guidelines, food safety standards and the hotel's grooming rules.
  • Work closely with the F&B Manager, outlet supervisors and front-of-house teams so all venues run smoothly.

Requirements & Eligibility

  • You must hold a relevant trade qualification (such as a Certificate in Cookery Level 4 or equivalent). Or you must have a minimum of three years of relevant work experience as a Sous Chef or senior chef in a similar kitchen.
  • Proven experience managing kitchen work across several outlets in a premium hotel or restaurant.
  • Strong cooking skills and the ability to keep a high culinary standard at every service.
  • Demonstrated experience leading, training and developing kitchen teams.
  • Demonstrated experience managing daily kitchen operations with confidence.
  • A solid understanding of food cost management, stock control and kitchen financial targets.
  • A current Food Safety certificate and full working knowledge of WHS requirements in a commercial kitchen.
  • Flexibility to work a rotating roster with evenings, weekends and public holidays.
