A fine dining restaurant in Victoria needs a Restaurant Manager in Melbourne. The food is farm-to-table. The restaurant wants a proven front-of-house leader. This person will shape the guest experience, build the team and keep premium standards.

Key Responsibilities
- Lead the front of house and keep standards high on every shift
- Set a polite, refined and attentive tone with guests
- Manage bookings, seating plans, guest preferences, VIP arrangements and special requests
- Talk with guests during their meal
- Be a visible leader on the floor during service
- Hold briefings before service and share the day's priorities
- Train, coach and mentor the floor team
- Work closely with the kitchen for smooth service
- Write weekly rosters from bookings, events, busy seasons and operational needs
- Check how labour is used and help plan the workforce
- Oversee drinks and front-of-house stock, order what is needed, and watch waste, breakage and usage to control costs
- Keep operational systems working and help with daily reports
- Look for ways to make service more consistent and efficient, and guests happier
- Keep food safety, hygiene, work health and safety and responsible service standards, and follow venue procedures, licensing rules and regulations
Requirements & Eligibility
- Proven work as a Restaurant Manager, Assistant Restaurant Manager, Maître d' or senior front-of-house leader
- A background in fine dining, premium restaurants or other high-standard hospitality
- International hospitality experience is highly desirable
- Skill in leading and developing front-of-house teams
- A strong understanding of how restaurants run, including labour planning, stock control and cost management
- Confident knowledge of wine, and experience explaining international wine selections
- Minimum WSET qualification required
- Excellent English communication skills
- Extra European language skills will be advantageous
- A professional and composed manner with guests and with your team
- Strong attention to detail and commitment to premium hospitality standards, and evidence of employment history, qualifications and experience for verification
