Do you love baking bread the traditional way? A bakery in Perth, Western Australia, is looking for a Head Baker. The bakery cares about craft, consistency and leadership.

Key Responsibilities
- Run the daily team that makes artisan bread
- Meet production targets and keep quality very high
- Make sourdough and yeast breads in the natural, slow way
- Handle each step: mixing dough, fermenting, shaping, proofing, baking and using the ovens
- Work in every production area, moving around with the team
- Teach and help the bakers grow
- Keep strict food safety and hygiene, and check quality
- Check ingredient stock and order more when needed
- Write production schedules
- Write staff rosters
- Work with production leaders so work flows better
- Suggest seasonal products and new bakery ideas
- Make handmade bakery products of consistently high quality
Requirements & Eligibility
- Has proven experience working in an artisan bakery
- Good knowledge of how to make naturally fermented and yeast-based bread
- Has led, supervised or mentored bakery teams
- Understands dough hydration, fermentation and artisan baking techniques very well
- Confident with wholegrain and specialty breads
- Strong organisational skills
- Strong production planning skills
- Experience in stock control and ingredient ordering
- Can prepare staff rosters and coordinate daily operations
- Creative mindset with an interest in product development
- Excellent communication and teamwork skills
- Committed to producing premium handcrafted bakery products
