A new premium Italian restaurant in Sydney, Australia, is looking for a General Manager. The venue is new, so you will help decide how it works. You will build the front-of-house team, set up the systems and keep service excellent.

Key Responsibilities
- Prepare the venue and team for opening day
- Plan FOH structures, floor plans and service workflows
- Recruit and grow a strong opening team
- Interview, onboard, train and develop staff
- Explain the service standards and performance goals
- Write SOPs and simple daily procedures
- Set up opening and closing routines for the venue
- Lead large FOH and bar teams every day
- Plan rosters and check that staffing is right
- Control labour spending and productivity
- Manage the restaurant POS and other systems
- Oversee premium wine, spirits and cocktail service
- Monitor beverage costs, GP, pricing and margins
- Manage purchasing and supplier relationships, and negotiate with suppliers
- Monitor service quality, guest experience and performance
- Maintain RSA, WHS and restaurant compliance
- Find gaps in operations and bring in solutions
- Coach managers and team members for a consistent service culture, and stay hands-on during service while keeping commercial oversight
Requirements & Eligibility
- Senior restaurant or hospitality management with a strong track record
- You have managed premium or high-volume restaurants
- You have opened or established a new hospitality venue
- Verifiable history of venues managed, launched or operationally led
- Experience leading large FOH and bar teams
- Strong recruitment experience
- Strong staff training and leadership experience
- Practical understanding of the restaurant floor
- Strong knowledge of wine, spirits, cocktails and beverage service
- Experience managing beverage GP, costing, pricing and margins
- Practical experience with rosters, labour budgets and staff cost control
- Experience with POS and restaurant management platforms
- Strong purchasing and supplier negotiation experience
- Sound understanding of RSA, WHS and restaurant compliance
- Ability to develop systems and procedures from the ground up
- Strong commercial awareness and operational decision-making skills
- Ability to demonstrate previous hospitality leadership through a credible career history
