Do you lead big kitchens? A well-established hospitality group in Sydney needs a senior Chef. The group has seven food and beverage outlets. More than 60 people work in the kitchens, and output is above 12,000 meals per week.

The employer wants more than cooking skill. You need to lead people, make good business choices and keep control of operations. You must also show your senior kitchen history with documents that can be checked.

Key Responsibilities

  • Direct the kitchens in seven food and beverage outlets
  • Lead, supervise and develop more than 60 kitchen team members
  • Keep food quality, presentation and service the same at every venue
  • Oversee menu development and help put menus into use across several operations
  • Control food costs, labour costs, buying and stock
  • Watch kitchen budgets and help the business make a profit
  • Hire and develop kitchen staff at different levels
  • Set up good kitchen systems, procedures and performance standards
  • Check food safety, workplace health and safety and legal compliance
  • Work with venue managers and senior leaders to meet targets
  • Find practical ways to improve productivity, workflow and cost control
  • Keep standards high in a large, fast and busy hospitality setting, and support a positive and responsible kitchen culture

Requirements & Eligibility

  • Proven experience as a Group Executive Chef, Executive Chef or a similar senior chef role
  • Experience leading large kitchen teams and complex operations
  • Experience managing high-volume food production
  • Strong knowledge of food costing, budgeting, labour control and purchasing, and a good understanding of kitchen profitability
  • Experience in menu development and keeping food standards consistent
  • Proven skill in recruiting, training, mentoring and keeping kitchen staff
  • Strong organisation, communication and people-management skills
  • Able to lead with a plan and still work hands-on when needed
  • Multi-venue hotel or hospitality experience is highly regarded
  • Knowledge of food safety, workplace health and safety and regulatory requirements
  • International recruitment or sponsorship experience is advantageous
  • Can provide verifiable proof of relevant employment experience and senior responsibilities
