Key Responsibilities
- Run the kitchen well during service
- Lead and organise the kitchen team so work flows smoothly
- Watch food preparation and make sure dishes meet quality and presentation standards
- Work with senior chefs on menu development and ideas for new dishes
- Use your knowledge of Asian flavours, ingredients and cooking methods
- Keep recipes, portions, flavours and presentation the same every time
- Coach, train and mentor junior chefs and new kitchen staff
- Give kitchen tasks to the right people for each service
- Work with front-of-house teams so service stays efficient
- Check stock levels, orders and ingredients
- Help with food costing and portion control, and reduce waste
- Help plan menus and suggest ways to improve the kitchen
- Help with rostering and use kitchen staff well
- Keep kitchen procedures correct and steady during service
- Follow food safety, hygiene and workplace health and safety rules, and keep the kitchen clean, safe and well organised
- Build a positive team with responsibility and high standards, and support senior management to reach operational, culinary and guest satisfaction goals
Requirements & Eligibility
- Trade-qualified Chef with relevant recognised qualifications
- Minimum 2 years' experience as a Junior Sous Chef or Senior Chef de Partie
- Strong practical experience in a commercial restaurant kitchen
- Demonstrated experience with Asian or Asian fusion cuisine, or substantial exposure to it
- Good knowledge of Asian ingredients, flavours, preparation methods and cooking techniques
- Can produce high-quality food again and again in a demanding service
- Previous experience supervising or supporting other kitchen team members
- Strong understanding of kitchen operations and service coordination
- Knowledge of ordering, stock control, food costing and waste management, with an understanding of menu planning and portion control
- Strong communication and leadership skills
- Professional approach to food safety, hygiene and workplace safety
- Able to work rotating shifts, including weekends and public holidays
- Reliable, professional and team-focused
