Key Responsibilities
- Lead kitchen staff during preparation and service
- Supervise, coach and develop junior chefs and commis chefs
- Keep food quality, presentation and consistency at a very high level
- Support the Head Chef with the daily work of the kitchen
- Help plan menus and write recipes
- Help create new dishes and put them on the menu
- Watch food preparation and cooking during service, and make sure all team members follow kitchen procedures
- Manage ingredient orders, stock levels and stock rotation
- Help with food costing and control of kitchen resources
- Keep correct operational and compliance records
- Keep food safety, hygiene and workplace health standards strong
- Work well with front-of-house staff during service
- Train and mentor developing chefs in daily practice
- Find ways to make the kitchen faster and better
- Set a good example with a professional, respectful and disciplined kitchen
Requirements & Eligibility
- Minimum 5–7 years' experience, gained in professional kitchens
- Minimum 2–3 years' experience as a senior chef, sous chef or supervisor
- Has worked in fine dining, Michelin-starred or equivalent high-end kitchens
- Shows career progress and growing responsibility at work
- Skilled in contemporary cooking methods
- Proven leadership and team-development skills, and able to train, mentor and motivate kitchen staff
- Knows food safety, hygiene and kitchen compliance well
- Communicates well and stays well organised
- Stays calm and keeps high standards in busy, demanding services
- Has used stock control, kitchen costing and inventory management
- Knows today's food trends and sustainable kitchen practices
- Preferred: a relevant culinary qualification, apprenticeship or equivalent professional training
- Committed to quality, consistency and always improving
- Currently working in Australia with a valid visa
- Can show suitable evidence of professional experience and qualifications
