A busy kitchen in Broken Hill, New South Wales, is hiring a full-time Chef de Partie. You will lead one section of the kitchen. You will also make pizza. The food is gastro-style and pub-style, so you will use both skills in one job.
The employer will look closely at where you have worked and will contact your referees. This job is for people who are already in Australia. Key Responsibilities
- Take charge of one kitchen section
- Prepare and cook gastro-style and pub-style food from the menu
- Make pizza dough and toppings, then bake in the pizza ovens at the right times
- Finish daily preparation and mise en place before service
- Plate food in the same way every time and keep portions even
- Taste and check the food while service is running
- Get all ingredients and equipment ready for service
- Rotate stock and watch what is running low
- Follow the rules for food safety, hygiene and cleaning
- Stay calm and efficient on busy days, whether the work is gastro dining, a function or pizza
- Speak clearly with chefs and kitchen staff, and help junior team members
- Share ideas for menu development and for a better kitchen, and keep professional standards in everything you do
Requirements & Eligibility
- You can demonstrate commercial kitchen experience
- You have worked before as a Chef de Partie or in a comparable role
- Strong gastro, pub or similar dining experience
- Proven pizza-making experience, including dough preparation and oven management
- About 3–5 years of professional kitchen experience preferred
- You can show that you manage an independent kitchen section
- You know commercial food preparation and cooking techniques well
- You understand food safety and hygiene standards
- You keep quality and consistency up during busy services
- Professional presentation and conduct
- Strong written and spoken communication skills
- Good organisation and time-management skills
- Reliable and adaptable at work
- A good team player
- Leadership and mentoring experience desirable
- Professional references required to verify previous employment and experience
- Currently based in Australia and available to start within a reasonable timeframe
