Mornings are important in a good kitchen. A growing hospitality business in Wollongong, New South Wales, needs a Breakfast Sous Chef to run its morning kitchen with the Head Chef.

Key Responsibilities

  • Be responsible for the daily work of the breakfast kitchen
  • Lead breakfast preparation and service to a high standard
  • Work with the Head Chef on kitchen operations and food direction
  • Supervise and support a team of up to five breakfast chefs
  • Train and grow junior kitchen staff
  • Help create and improve breakfast menus and seasonal specials
  • Keep food quality, presentation and portion control steady
  • Plan daily preparation and make sure all mise en place is done
  • Manage stock levels, ordering, rotation and waste
  • Follow food safety, hygiene and cleanliness standards
  • Keep the kitchen moving well in busy breakfast services and look for ways to improve systems
  • Help the wider kitchen team when needed and keep a respectful, motivated culture

Requirements & Eligibility

  • Minimum 2–5 years' experience in a Sous Chef or senior chef position
  • Proven experience in breakfast or brunch kitchens
  • Strong knowledge of modern Australian breakfast and café-style food
  • Earlier experience supervising or leading a kitchen team
  • Able to train, guide and motivate junior chefs
  • Strong food preparation and presentation skills
  • Good knowledge of food safety and kitchen hygiene
  • Experience with stock control, ordering and reducing food waste
  • Strong organisation and time management
  • Confident communication and leadership skills
  • Able to perform well in busy service periods, and comfortable with early morning shifts
  • Professional, reliable and team-focused
